The Winery is located in San Pietro di Feletto, in the heart of CONEGLIANO VALDOBBIADENE production area, historically given over to the production of the PROSECCO SUPERIORE D.O.C.G. It was founded in 1978 by the oenologist Fabio Ceschin, who is still at the helm of the business with his wife Gianna and their three children: Francesco, Sara and Andrea.
The grapes are harvested only by hand from totally 274 acres of vineyards: 76 acres managed directly and 198 from exclusive vine growers; All the wine come from grapes vinified directly by the Winery.
Abt. 20 acres, between those managed directly, are entirely organically cultivated.
Il Colle believes that the key element that grants that the quality and health of the grapes are transferred to the wine, is the technology applied in the wine making process. It dedicates its resources to refine the art of wine making and has developed an exclusive method that permits to reduce drastically the sulphites content: IL COLLE METHOD ®.
